Is it okay to change just one piston?
Is it okay to change one piston? My Vauxhall Astra diesel has done 36,000 miles and there is no damage to the bore, only the piston and the head.

Yes if you have checked all the others and they are ok, and given the mileage then just changing the bad one should be all right.
You might want to consider changing the piston rings on all cylinders so as to keep the compression/balance the same.
