What are the insurance implications if you change tyres for those with a different speed rating. For example you go for 91H XL tyres instead of 94V or W XL tyres? Many winter tyres appear to come in lower specs than summer?

As long as they conform to construction and use regulations and fall within the parameters that the manufacturer advises, there are no issues. The argument on speed rating is that the speed limit on a motorway is 70mph and you should not be exceeding it. The lowest speed rating from what you have quoted is 130 mph. Also highly unlikely you will load your vehicle above the tyre rating. As an engineer, we inspect tyre condition and tread depth primarily, rarely would we be checking speed and weight ratings on cars. Trucks and vans are a different matter.
